Stuffed Jalapeno Peppers
jalapeno peppers
2 eggs, beaten
cream cheese (or whatever kind you want)
cornmeal and flour, equal portions
oil

 

Rinse peppers. Don't remove stems, they will be the handles. Make a slit lengthwise, in each pepper and remove seeds. Fill with cheese and close (don't overfill). Coat each pepper in egg, then in cornmeal-flour mixture, roll each pepper, holding by the stem. Fry until brown, turning so that they fry evenly. Or you can deep fry them.
Preparation Time: Serves: as many as you like
