Occo Bono
Stew-Main Meal
shin on the bone
chillies
garlic, zest of 2 lemons
salt
pepper
tomato paste
canned tomatoes
juice of lemons
parsley
wine(opt)
mushrooms(opt)

 

Put meat, which has been coated in flour, in a big saucepan with a little hot oil, sear both sides. Add wine stock or water (2/3 cups) and more later if needed. Add chillies, lemon peel, tomatoes in can, paste, 150g lemon juice-add half now and keep the rest until later. Add according to taste, as all ingredients in this recipe, the salt and pepper. Let simmer for 2/3 hrs. Take off heat, add parsley and more garlic, if wanted. Cook 1/2 hr. and check to taste, e.g. garlic, salt juice, chillies, take out bones, leaving marrow in the pot. Serve with small new potatoes and long beans. This has a lemony tangy taste!
