Authentic Welsh Cakes
Serve Them Hot on St. David's Day!
4 cups plain flour
1 tsp. baking powder
1 1/4 cups butter
3/4 cup sugar
1 1/2 cups sultanas and currants
1/2 tsp. mixed spice
1 egg
Pinch salt
Milk to mix

 

Sift flour, salt and baking powder. Rub in the butter.

Add sugar, spice and dried fruit.

Beat the egg and add a little milk. Mix into dry ingredients. Dough should be fairly stiff.

Turn onto a floured board, roll out and cut into 3-inch rounds about 1/2 inch thick.

Cook over a medium heat on a lightly-greased heavy-based pan or greased griddle.

Do not allow to brown too quickly or the inside will not have the correct sandy texture and will not be cooked.

Serve with jam or honey or sprinkle with sugar.

In some parts of Wales a mixture of butter and lard is used.
