Easy Eggs and Potatoes
Easy and Quick Breakfast Dish
-1 potato
-Onion-chopped (as much as you want)
-2 cloves of garlic, minced
-1 roma tomato-sliced
-2 eggs, scrambled
-Oregano, Pepper, Salt, and Cayenne Pepper (To taste)
-olive oil

 

PREPARATION

Put enough oil in a pan so to cook the potato cubes, but not deep fry. Clean potato and cut into cubes. Peel and mince onion and garlic. Put onion and garlic aside. Slice 1 roma tomato into about 5 slices. Crack 2 eggs and scramble. Put the uncooked scrambed egg aside.

COOKING

Place potato cubes in oil to cook. When the potatoes start to brown then throw in the garlic and onion. You can also toss in your pepper, organo, and cayenne pepper at this point. You wait to put in the garlic and onion because they tend to cook faster. Cook the mix of potato, onion, and garlic for 3 minutes. Now, throw your uncooked scrambleds egg over these veggies and let them all cook together. Stir around occasionaly to make sure the egg is evenly cooked. It should take no longer than 3-4 minutes for the egg to cook. You can now take this mixture and put it on a plate. Add your roma tomato slices on the side. And BAM!, an easy breakfast for a king.
