Granny McPeeks Pumpkin Cake
A Moist,Sweet Cake, Easy to Make, Hard to Resist!
3 1/2 cups self-rising flour
2 tsp. cinnamon
2 tsp. nutmeg
1 cup oil
2/3 cup water
4 eggs
3 cups sugar
2 cups cooked pumpkin or sweet potatoes, mashed

 

Sift together dry ingredients, make a well in the center and add remaining ingredients. Mix until the batter is smooth. Pour into 2 prepared loaf pans or an angel food pan. Bake for one hour at 350 degrees until done. Might take longer in an angel food pan, test with a toothpick if unsure. If you wish, you may substitute 4 tsps. of pumpkin spice for the cinnamon and nutmeg. You may also choose to add nuts to this at the last minute. This cake is so delicious it really does not call for an icing. I usually put a paper doily on top and sift a little powdered suger over it. Remove the doily, it makes for a beautiful presentation, and is so easy! This is one of those tried and true recipes that I got from an elderly woman I knew years ago. It never fails me!
