Rave Reviews Coconut Cake
Cake
1 Pkg (2-layer size) yellow cake mix.
1 pkg (4-serving size) vanilla flavored instant pudding
1 1/3 cups water
4 eggs
1/4 cup vegetable oil
2 cups angel flake coconut
1 cup walnuts (chopped)

Cream Cheese Frosting Ingredients:
4 Tbls. butter or margarine
2 cups coconut
1 8oz. pkg cream cheese
2 tsp. milk
3 l/2 cups confectioners sugar
l/2 tsp. vanilla

 

Blend cake mix, pudding mix, water, eggs and oil in large mixer bowl. Beat at medium speed 4 minutes. Stir in coconut and walnuts.

Pour into 3 layer pans.

Bake at 350 degrees F. for 35 minutes.

Frosting Directions:
Melt 2 Tbls. butter in skillet. Add coconut. Stir constantly over low heat til golden brown. Spread coconut on absorbent paper to cool.

Cream 2 Tbls. of the butter with the cream cheese. Add milk. Beat in sugar gradually. Blend in vanilla.

Stir in 1 3/4 cups of the coconut.

Spread on tops of cake layers.

Stack and sprinkle with remaining coconut.

Preparation Time: 45 minutes Serves: 8-10
