Easy low-carb chicken salad
A very tasty way to cut back on carbs.
1. cooked chicken (grilled or baked) (white or dark) or raw chicken (white or dark) -1 breast or a leg quater or two legs
2. 1/4 or 1/3 cup mayonaise
3. 2 or 3 TBS diced red onion
4. (only if you are using raw chicken) flour to coat chicken. and some olive oil

 

If you start with raw chicken then I recommend using a breast as they are easier to cook. Set out some flour on a plate or in a pan and put your raw chicken in the flour and turn and in flour until fully coated. (do not use egg to help the flour adhere) then place in a skillet with a bit of olive oil on the bottom. Turn over to brown all sides of chicken until cooked thouroghly to center. Set on a paper towel and let sit until cooled. Once cooled tear the chicken by hand into little peices. If using precooked chicken this is where you start. After the chicken is all torn into peices, place in a small bowl. Then put the mayonaise and onions on the chicken and mix until all chicken is fully coated. Enjoy!
