Baby spinach salad with White Truffle oil
Light and Tasty
Several handfuls of clean baby spinach,

2 slices of pancetta or bacon,

1 tablespoon of USDA 100% organic White Truffle oil

3 baby bella cremini mushrooms,

¼ teaspoon of lemon juice.


 

Place spinach in a glass bowl, place pancetta between 2 sheet of paper towel and microwave for 30 sec or until crisp, crumble into salad.

Take cleaned mushrooms and with a truffle slicer (or potato peeler) slice paper thin and add to salad. Then take your cheese and slice paper thin shards (6-9) into the salad, add lemon juice, truffle oil and toss.

Finish with a touch a sea salt and serve.
