Hatian Bean Sauce
Capt. Tom's Variation
1 lg. package pinto beans
1 clove garlic
1/2 tsp. freeze-dried chives
salt, to taste
pepper, to taste

 

Soak the beans overnight, adding a small amount of salt to the water. Drain and cover with water and bring to a boil, adding a clove of garlic or two and the dried chives. Cook until tender. Remove the garlic cloves and cook further until the beans are soft.

Strain about half of the beans through a colander, discarding the bean pulp. Add the strained beans to the unstrained beans and mix well. Add some chopped onions, if desired.

Serve hot over rice.

Note:
Also great with Haitian Pork Cubes as the Main Dish.
