Curry Mussels
Mussels in Coconut Curry Sauce
12 mussels
2 oz. coconut milk
2 oz. tomato sauce
1 Tbls. Curry powder
1 oz. Water
1 tsp. cilantro

 

In a hot Saute Pan, add water, coconut milk, tomato sauce and Curry powder.

Mix well and after it comes to a boil, put mussels in. Cover and cook for about 2 minutes
or until mussels open up.

Serve in a bowl and top with cilantro.

Preparation Time: 10 Minutes Serves: 1
