Salmon Tower
Salmon and Seaweed with Spinach Sauce!
1 side of fresh salmon, skinned and pinned
1 packet of seaweed
1 pack of spinach
salt and pepper
Arrow root
1/2 bottle white cooking wine
cherry tomatoes

 

Using a small pastry ring cut out 12 pieces of fresh salmon.
Poach the salmon pieces in a poaching pan till they are just cooked, do not over cook.
Whilst the salmon is cooking, cook the seaweed in boiling water with a pinch of salt. Whilst they are cooking, put the wine in a pan and reduce by half, slice the spinach and place in the wine a little seasoning. Allow to boil and thicken using the arrow root diluted in a little water. Place the cherry tomatoes in the pan. Taste, alter seasoning if required, and reduce to a very low heat. Once the salmon and seaweed are cooked, layer the salmon and seaweed so there are 3 pieces per portion. Place the sauce around the tower, and garnish with the cherry tomatoes.
