Tres Carne Chili
Winning Texas Chili Recipe
• (2) 1 small 1 large white onions chopped large and small chunks
• Medium green bell pepper diced
• (4) Cloves garlic minced
• (6) Med to large jalapenos fine diced
• 12 ounce bottle of corona beer
• (1.5) cups TX Merlot or dry red merlot of choice
• 1.5 lb ground beef – 90% lean
• lb beef tenderloin or sirloin (if your cheap), cut into ½ inch chunks’
• Link spicy venison or pork sausage – I use venison because it’s low in fat.
• (1/2) lb thick cut peppered bacon cut into 1” pieces - get your fat from here
• Regular can of rotel
• Small can tomato paste
• Spicy hot V8 – 16 oz bottle
• (2) Cups of water
• (1/4) cup extra virgin olive oil
• (4) Bay leaves
• (2) 12 oz cans ranch style beans
• (2) Limes
• Tbl paprika
• Tbl cumin
• (3) Tbl chili powder – can add more during cooking to reach perfect taste
• Tbl black pepper
• Pinch or two of Kosher salt to taste
• Tbl honey - heaping
• ½ cup flour mixed with ½ cup of crunched up small Fritos – add slowly for no clumps.
• Tbl cayenne pepper
• Tbl fresh cracked black pepper
• Tbl thyme
• (2) T Italian seasoning


 

Cut all of the meat up and brown with ground meat in 2 tbl. of olive oil in large sauce pot.
• Add onions, peppers, garlic and beer and bring to a boil simmer for 10 minutes.
• Add wine and V8 and boil high for 5 minutes stirring frequently.
• Add rotel, tomato paste and water while boiling then reduce heat and simmer.
• Stir in all other ingredients over 20 minutes while stirring frequently.
• Add flour and Fritos at end to thicken.
• Add 2 halved limes to pot and simmer on low for 2.5 hours.


Use your judgment on how much water you need to use to reach the consistency you desire.

I make a large batch of rice in a separate pot and allow people who want it to add to their own bowls. The best rice is TexMati, if you like rice, eat this rice and you will never eat anymore.
