Bitter Gourd - Special
Bitter Gourd Curry with Brown Sugar
300 Grams Fresh green Bitter gourd
100 Grams of Refined Oil
100 Grams of Brown sugar
100 Grams of Tamarind
1 Spoon of Turmeric powder
1 Spoon of Mustard seeds
1 Onion - finely chopped
1 Spoon of Red Chilli powder
6 Garlic Cloves
Salt to Taste

 

Wash the Bitter gourds and chop them into thin round slices. Put the slices in boiling water and add one spoon salt and turmeric powder. Allow to cook for about ten minutes. Remove the vessel from stove and drain the water out.

Soak the tamarind in warm water for about fifteen minutes and extract the juice by squeezing.

Take a deep bottomed pan, add oil and heat. Add the mustard seeds, onion pieces, red chilli powder, garlic cloves and saute well.

Now add the Cooked bitter gourd pieces, Tamarind juice and the brown sugar. Add sufficient salt, mix well and cook until all the ingredients are blended well.

Serve with hot rice!
