Here is the recipe that I promised. CRUST INGREDIENTS 1 cup graham cracker crumbs 1/3 cup butter,melted 1/4 cup of sugar FILLING INGREDIENTS 1 cup orange juice (fresh squeezed if possible) 1/4 cup water 2 (1/4 ounce) envelopes unflavored gelatin 1 1/2 cups sugar 5 large eggs slightly beaten 1 heaping tbsp of grated orange peel (avoid the white part,it is bitter) 1/2 cup of butter,softened 2 (8oz) packages of cream cheese softened 1/2 cup of whipping cream GARNISH INGREDIENTS Orange slices Sweetened whipped cream 1) Stir together all crust ingredients in a medium bowl. Press onto bottom of ungreased 9 inch springform pan. Set aside. 2) Combine orange juice and water in a 2 quart saucepan,sprinkle with gelatin and let stand 5 minutes to soften. Add sugar,eggs and orange peel. Cook over medium heat stirring constantly until mixture just comes to a boil.DO NOT ALLOW TO BOIL. Remove from heat and set aside. 3) Combine 1/2cup butter and cream cheese in a large mixer bowl. Beat at medium speed gradually adding hot orange mixture and scraping down bowl often. Mix for about 2 minutes. Refrigerate,stirring every 15 minutes until cool,about 45 minutes. 4) Beat 1/2 cup whipping cream in a chilled mixer bowl at high speed until stiff peaks form,about 3-4 minutes. Gently stir in orange mixture and pour into prepared crust. Cover and refrigerate until firm about 3-4 hours. 5) Loosen sides of cheesecake by running a knife around inside of pan. Remove pan with care. Garnish top of cheesecake with whipped cream & orange slices. ENJOY! |
