Hello, I have moved house and the previous owner has planted marrows everywhere. i have never eaten one before. I would like to try it but do not have any recipe Really appreciate if someone can give tried recipe of making marrow. Thanks |

STUFFED VEGETABLE MARROW 1 med. size marrow 1/2 c. soft bread crumbs Sm. onion, minced 1 tsp. summer savory or other herbs Salt and pepper to taste 2 c. leftover meat (minced) 1 beaten egg 1 tsp. parsley Flour 3 tbsp. drippings Peel marrow, cut in half lengthwise, take out pulp and seeds. Boil in salted water 10 minutes. Drain well. Combine meat, crumbs, egg, onion, parsley and seasoning. Fill 1/2 of the marrow with mixture. Cover with remaining half and tie with string. |

We have been away visiting grandchildren in Canberra, our nation's capital, and I have just caught up again with the site. Here is a recipe for Marrow Pickle. Peel, seed and cut marrow into cubes. Put in layers on a dish, sprinkling salt between layers. Treat a pound of small pickling onions the same way. Leave o'night. Drain well. Put 1/2 lb sugar, 1 ounce ground turmeric, 1/4 ounce chilli pods and three quarts vinegar in a large saucepan and simmer half an hour. Add marrow and onions. Simmer till thick. Put in jars and seal. |
