Yes, it's that time of year again and I'm dedicating a weekend to do Christmas Baking... I'm looking for some "nut free" Christmas Cookies...many of the ones I like have nuts in them...my son has a peanut allergy, and it seems he misses out on half the fun because he usually doesn't get to eat any of it.... So for anyone that's out there....got any good cookie recipes without nuts? by the way...Happy Thanksgiving my American Friends.... |

Here is a great shortbread recipe that can be cut into xmas shapes such as stars or trees etc. and it is peanut free. SHORTBREAD COOKIE RECIPE 1/2 cup butter 1/8 tsp salt 1/8 tsp baking soda 1/4 cup fruit sugar 1 cup flour sugar to decorate Mix together flour,salt and baking powder Cream butter and fruit sugar together Add flour mixture and mix well Roll out to about to about 1/4 inch thick Cut into desired shapes and poke all over surface with a fork (this stops rising) Bake in 300 F degree oven for 45-50 minutes until cookies just start to color Cookies should not brown Remove from oven and sprinkle with sugar or colored xmas decorations Wait until cookies cool a bit before removing from baking sheet. Hope your son enjoys them. |
