What does "sweat of vegetable" mean and how is it done? I have a recipe with instructions for "sweat of vegetables" including onions carrots and celery.

I believe the term you are looking for is "SWEATING VEGETABLES" The vegetables are cooked in a small amount of recipes over very low heat. The vegetables should not brown during this process. When the onions become a bit transparent then the process is usually done.
