Post subject:  Traditional Swedish meatball recipe

I am looking for a traditional Swedish meatball recipe to serve for Christmas. There are a few recipes on this site but they are not the authentic Swedish meatballs like my grand mother use to make. The recipe I remember had really small meatballs over egg noodles with a lil gravy and some berries on the side.

I am looking forward to your recipe :D Could you please also tell me what the berries are? They are small bright red berries in a sauce much like chutney.

The name is lingonberries and its a jam I believe. I need to check on that though.

Since you need this recipe right away I will post it here 1st and then transfer it into the Netcooks site.

3/4 pound ground beef
3/4 pound ground pork
1/2 cup bread crumbs
1 Medium onion, finely chopped
1/2 cup milk
2 eggs
2 tablespoons Worcester sauce
1/2 teaspoon white pepper
salt to taste or about a1/2 teaspoon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice

1/2 stick butter
2 cups beef stock

In a mixing bowl combine all of the ingredients except the butter and beef stock. Mix well by hand or with a wooden spoon and let stand for 10 minutes.

Using your hands, roll the meat mixture into small balls of about an inch in diameter and place them on a cookie sheet. They should retain their ball shape and not flatten out. If they flatten out add more bread crumbs.

Melt some of the butter in frying pan and add meatballs being careful not to over crowd them.

Fry meatballs on all sides until browned and no longer pink in the middle.

You can keep the meatballs in a low oven to keep them warm, while you are working on your next batch.

To make the gravy, whisk in 3 Tbs flour into your frying pan and cook for 1 to 2 minutes or until brown and bubbly. Slowly stir in 2 cups of beef stock and cook until the gravy is thickened. At this point, you may add a little cream to your gravy if you wish.

Serve meatballs over egg noddles with a drizzle of gravy and the lingonberry jams on the side. Swedes also serve this dish with mashed potatoes instead of the egg noddles.

Is there a good dough recipe to make calzone? I lost my one and only calzone recipe and while I know how to knead the dough and add the sauce, toppings, etc., I don't have the recipe for the dough. I've got yeast, flour, sugar, salt, H2O, etc. Does anyone have a good calzone dough recipe?
