Hello Swede, Good luck finding the authentic recipe. Italian Wedding Soup is like meatloaf, everybody has their own version. If I were you, I would look up a recipe that has the ingredients you like and go on from there. Basically the soup is a meat and vegetable soup with most versions using spinach or escarole and veal or beef. The key to the soup is using a good chicken stock and a leftover ham bone from a smoked ham. I will post my recipe later today. Let me know what you think! Tom |

Hi Guys, The link for the Italian Wedding Soup recipe is: http://www.netcooks.com/recipes/Soups/I ... .Soup.html The soup takes a while to make because you are making a chicken stock from scratch first and then adding the ingredients for the Italian Wedding Soup. If you want to try the quick version, just buy a good canned chicken broth and take it from there. Let me know how it turns out. Tom |
