Is it possible to undercook a prime rib roast? My family likes it medium rare to rare and I am concerned that if I dont brown it all the way through (medium well to well down) there might be some health concerns?

thanks for your help

Boy, I'm not sure but have seen people eating it practically raw, although I'd be pretty careful about that with all you hear about e. coli and such. Sorry I couldn't be of more help.

e.coli is a concern in ground meat because is can the bacteria could find its way into the center of a hamburger. That is why they suggest you cook your burger to medium well. In a roast such as the prime rib you are preparing, it would be a crime to cook it past medium rare. Enjoy your prime rib dinner worry free!!!!!!! :D

Thanks for all your help! After a little research I decided to go with the medium rare prime and my Christmas dinner turned out perfect and everybody is still raving about it.
