Is it possible to undercook a prime rib roast? My family likes it medium rare to rare and I am concerned that if I dont brown it all the way through (medium well to well down) there might be some health concerns? thanks for your help KJ |

Boy, I'm not sure but have seen people eating it practically raw, although I'd be pretty careful about that with all you hear about e. coli and such. Sorry I couldn't be of more help. |

e.coli is a concern in ground meat because is can the bacteria could find its way into the center of a hamburger. That is why they suggest you cook your burger to medium well. In a roast such as the prime rib you are preparing, it would be a crime to cook it past medium rare. Enjoy your prime rib dinner worry free!!!!!!! |

Thanks for all your help! After a little research I decided to go with the medium rare prime and my Christmas dinner turned out perfect and everybody is still raving about it. KJ |
