Hi All,

I am looking for an authentic Italian wedding soup recipe. I see lots of recipes online and they all have different ingredients. Can anyone help me with an original recipe?

Thanks,

Swede

Hello Swede,

Good luck finding the authentic recipe. Italian Wedding Soup is like meatloaf, everybody has their own version. If I were you, I would look up a recipe that has the ingredients you like and go on from there. Basically the soup is a meat and vegetable soup with most versions using spinach or escarole and veal or beef. The key to the soup is using a good chicken stock and a leftover ham bone from a smoked ham. I will post my recipe later today.

Let me know what you think! 8)

Tom

Hi Guys,

The link for the Italian Wedding Soup recipe is:

http://www.netcooks.com/recipes/Soups/I ... .Soup.html

The soup takes a while to make because you are making a chicken stock from scratch first and then adding the ingredients for the Italian Wedding Soup. If you want to try the quick version, just buy a good canned chicken broth and take it from there.

Let me know how it turns out.

Tom
