Are you on a low-carb diet to lose weight? You'll still need about 120 g carbohydrate a day. A good idea is not to eat any after 6pm and keep the level low at your last meal.Here is an easy fish rissole recipe that gives you only 5.6 g per serve:
Serves 4
750 gm redfish or similar fillets
1/4 cup red curry paste
2/3 cup coriander leaves(if out of season, use flatleaf parsley)
Olive oil cooking spray
Steamed rice to serve (brown is better.)
Dipping sauce:
1/3 cup sweet chilli sauce
1 tablespoon lime juice
1 teaspoon fish sauce
1 tablespoon finely chopped coriander leaves
METHOD:
Process fish, curry paste and half the coriander to a paste.
Shape into 12 rissoles.
Heat non-stick frying pan over medium heat.
Spray both sides of rissoles with oil. Cook 3 to 4 minutes each side, keep warm by covering with foil on a plate.
Combine dipping sauce ingredients in a bowl.
Serve with the rissoles, steamed rice, steamed vegetables of your choice and remaining coriander.
