Here is a really good one to start you off.

GRILLED FLANK OR SIRLOIN STEAK WITH CUMIN AIOLI
Serves 4

3 tbsp extra virgin olive oil
1/2 tsp salt
2 cloves of minced garlic
1/2 tsp coarsley ground black pepper
1 flank or sirloin steak - about 2 1/2 lbs
1 tbsp cumin seeds
1 large egg
1 tsp dijon mustard
1/2 tsp salt
1 clove of garlic minced
1/2 cup veg. oil
1/2 cup olive oil
4 tsp lemon juice

Mix the first amounts of olive oil,salt,garlic and black pepper in a small bowl.
Spread on both sides of the steak,cover and refrigerate.

Dry roast the cumin seeds in a small frying pan over medium heat until they darken a shade. Remove from the heat and finely grind half the seeds in a spice or coffee grinder.

In a blender or food processor,combine the egg,dijon mustard,salt,garlic and the finely ground cumin seeds. With the motor running add half the oils in a slow steady stream.
Add the lemon juice and continue adding the rest of the oils until the aoili is emulsified.
If the mixture is too thick add a spoonful or two of water.
Scrape the aoili into a bowl and stir in the whole cumin seeds.

Grill your steaks to your liking then cover with foil and let rest for about 5-7 minutes.
This helps circulate the juices and tenderizes the steaks. Don't forget this step.
Slice thin slices across the grain and serve with the sauce on the side.

Total carbs 8.88
Carbs per serving 2.22

I've been doing the low-carb thing for a while too. It's worked fine though the first 3~4 weeks were killer. Good luck with it.

Tomato Basil Mozzarella Frittata
Ingredients:
3 eggs
3-10 cherry tomatoes chopped in half (use as little or as many as you want)
3-10 fresh basil leaves chopped (use as little or as many as you want)
Shredded mozzarella again as little or as much desired. We usually include about a quarter cup
Salt and pepper
1 teaspoon to scant tablespoon olive oil
_ teaspoon chopped garlic

Preheat oven to 450 or broil
Place rack in middle not to close to broiling element

Beat the eggs then mix all ingredients in a bowl except the cheese. Pour olive oil into medium hot skillet (with metal handle) then add garlic for one minute. Lower the heat and add the remainder of the ingredients except the cheese. Coat the bottom of the pan with the egg mixture and using a spatula replace some of the cooked egg with uncooked by lifting up the edges. Do this for about 30 seconds to a minute then remove. The majority of the eggs will not be cooked yet! Add the cheese to the top and place skillet in the oven. Check at two to three minutes and keep checking until the eggs are cooked – they usually rise and the appearance is a lot like a pizza!. Don’t over cook. If the eggs look a slight bit soft and underdone they will continue to cook after being taken out of the oven. Let rest for a couple of minutes and enjoy!

Here's a good good-carb recipe. I copied it from http://www.savvyfaire.com. For Pork Chops you need a :

Lean bone in pork chop or boneless pork chop
Olive oil
Salt (preferably Kosher or sea salt)
Pepper
Celery seed
Ground cumin

Coat the pork chop with the olive oil. Salt on both sides like a light snow fall and don’t over salt then grind on some black pepper. Sprinkle on celery seed and a generous amount of ground cumin on each side. Place on hot grill until done and the inside temperature of the pork is 160-170 degrees Fahrenheit (just pink on the inside, about 3-5 minutes per side).

Sounds very good,but remember to allow your meat to 'rest' for about 5 -7 minutes after you have finished cooking it. Cover tightly with foil and let the juices expand in the meat.This makes the meat more tender. How many times have you bought a nice cut of meat and it is not as tender as you would have hoped. Try this tip and you will see the difference. This works for all types of meat,pork,chicken,turkey,etc. For large pieces like turkeys or large roast beefs keep covered for about 15 -20 minutes.

Here's a salad recipe I've tried recently. I use
1 package mixed salad greens or butter lettuce, washed
2 1/2 tablespoons pumpkin seed oil or your favorite flavored olive oil
Scant teaspoon apple cider vinegar
Pinch Kosher salt
1/2 cup pumpkin seeds
Raclette or soft pecorino cheese or Port Salut
- cut into slices about 1/8 inch thick
Pinch black pepper

Heat a medium skillet, add the pumpkin seeds and toast until they begin to “pop” and turn slightly brown. Remove from the heat and set aside.

Place the salad greens in a large bowl and add the kosher salt and mix the greens. Add enough oil to just coat the leaves then toss. Don’t over oil. Add the apple cider vinegar and toss well. Add pepper.

Place a slice of cheese near the edge of one side of the plate and heat in the microwave until melted and bubbly, approximately 20 seconds. Place some of the pumpkin seeds then salad on the plate. Garnish over the salad with the more toasted pumpkin seeds.

Are you on a low-carb diet to lose weight? You'll still need about 120 g carbohydrate a day. A good idea is not to eat any after 6pm and keep the level low at your last meal.Here is an easy fish rissole recipe that gives you only 5.6 g per serve:
Serves 4
750 gm redfish or similar fillets
1/4 cup red curry paste
2/3 cup coriander leaves(if out of season, use flatleaf parsley)
Olive oil cooking spray
Steamed rice to serve (brown is better.)

Dipping sauce:
1/3 cup sweet chilli sauce
1 tablespoon lime juice
1 teaspoon fish sauce
1 tablespoon finely chopped coriander leaves
METHOD:
Process fish, curry paste and half the coriander to a paste.
Shape into 12 rissoles.
Heat non-stick frying pan over medium heat.
Spray both sides of rissoles with oil. Cook 3 to 4 minutes each side, keep warm by covering with foil on a plate.
Combine dipping sauce ingredients in a bowl.
Serve with the rissoles, steamed rice, steamed vegetables of your choice and remaining coriander.

yes i am..how about you?

anyways...: I’ve been thinkin’ about Low Carb Diets and which one to try as well. Those last 10 pounds are so hard to get rid of. I’ve checked out http://info.savvyfaire.com recently. I’ve been looking into the low glycemic index carbs like brown rice. Basically you don’t have to do away with carbs COMPLETELY... You just have to eat the RIGHT carbs. Sort of reminds me of the South Beach Diet. It was pretty eye opening for me. Check it out.

.... but then my kilt came in. Got measured for it some three months ago and it's been at the kilt-makers and kilt-finishers since. Once it got here, it fit fine but I'm in the last available hole on every buckle the thing has. If I get under 183# I can't wear it, so the wife has officially released me from all household diets. Doesn't mean I don't have to support her efforts, but hey, it's different. :lol:
