:D HERE'S HOPING THAT EVERYONE ENJOYED THEIR DAY OFF AND DID SOMETHING WONDERFUL OR JUST RESTFUL. WHY NOT LET US KNOW WHAT YOU DID. DON'T BE SHY NOW. I HAD A BBQ WITH FAMILY AND FRIENDS AND WE TOLD JOKES AND STORIES AND HAD A PRETTY GOOD TIME I MUST SAY. POLICE ONLY HAD TO SHOW UP TWICE. ONLY KIDDING!! OR AM I ? ANY HOW TELLS US YOUR STORIES.

.... cuz I told them up front there wasn't enough for everybody, but we did pork loin in Carolina Treet on the grill. It was simple, easy and VERY tasty. Like the sign in my kitchen says, "If we are what we eat I'm fast, cheap, and easy."

Hmm...nothing fancy, quiet day...

cubed chicken breast
sliced mushrooms, onions, and garlic
chicken broth (in place of cooking oil)
sweet corn kernels
enough diced tomato for color and flavor
dash of cajun seasoning
sauted together and served hot over baked potatoes

and chocolate fudge sheet cake with almond cream cheese frosting :D

You mean to tell me it was a Holiday! haha... Well I worked all day! In fact all weekend! But hey that means things are taking off for me finally and that's great.. one of these next holidays I will spend it relaxing! Besides.. you guys didn't invite me!

:oops: Uhm, it was a lazy weekend. The cake came out of a box...any chocolate cake will do.

The frosting is easy:

Almond Cream Cheese Frosting

6 oz cream cheese - softened
2 tblsp milk
1 tsp almond extract
4 to 5 cups confectioners sugar - sifted

blend first three ingred. Add sugar a bit at a time, blending after each addition til fairly smooth. Continue adding sugar until frosting reaches desired level of sweetness. (Seems everyone has a different preference for the sweetness of their cream cheese frosting.)
