I would boil the chicken first, then shred it for the quesadillas. You can add seasonings when you boil it such as tabasco, dried pepper flakes, chili powder...
This is a recipe I 'borrowed' and adapted for cooking chicken to use in mexican style recipes.
1 lb chicken breasts
3 cups water
1 tsp chili powder
1 tsp crushed red pepper flakes
bring to a boil and boil for 5 min. cover and reduce to low and simmer about an hour or until chicken is cooked through. allow to cool and shred for your recipe. cutting the chicken into smaller pieces also reduces cooking time.

I usually use chicken that I have baked in the oven. I usually lift up the skin over the breasts and rub them with finely chopped garlic and salt, pepper and some chili powder. I then put the skin back over the breasts. You can put your favorite flavors. After it is cooked I shred what I need. Very easy to do.
