To answer your question escarole is extensively grown in europe for its root,which,when roasted and powdered,is used as a coffee substitute. Escarole is also used as a potherb and salad plant,the most common being the french endive. Escarole is also known as chicory.

I knew that clever Canadian guy would get in first!!!
There are two plants. True endive is cichorium endivia, which is why the Spanish call curly endive 'endibia'.( or, wrongly, escarola.) Chicory is cichorium intybus. The shoots of chicory can be used in salads.
You can use them together.
Slice 2 small chicory heads and shred an endive. Soak both in cold water for 10 minutes.
Drain, place in large salad bowl. Add a peeled, cored and sliced dessert apple, a tablespoon lemon juice, 3 chopped celery stalks, 2 chopped spring onions, some chopped walnuts and a slurp of French dressing.
