Chinese Clams list "Gourmet Powde"r. What is this? What's a substitute? Also, why are quantities for all ingredientes not shown? Very POOR recipie!!

Chinese gourmet powder is really M.S.G. or monosodium glutamate. This is basically a flavor enhancer and more and more chinese restaurants have STOPPED using this product because it gave a lot of people headaches. If you leave this out of a recipe nothing will happen. Use some salt and pepper instead. One good thing about chinese recipes is that there really aren't any quantities to go by. You can use more or less of something or substitute one vegetable for another,etc. So don't sweat the little things,make the recipe and just enjoy.
