Well the recipe for SLICE OF LIFE that I have is a follows:
100g Soya flour 100g = 3.5oz 100g wholewheat flour 100g porridge oats 100g linseeds 50g sunflower seeds 50g = 1 3/4oz 50g sesame seeds 50g flaked almonds 2 pieces of fresh ginger finely chopped (each piece about the size of your thumb) 250g of dried chopped fruit (like you use for fruitcake) 250g = 8 3/4oz 1/2 tsp nutmeg 1/2 tsp cinnamon 750ml soya milk 750ml = 25oz 1 tbsp malt extract ***This is optional-----› 75g of chopped apricots makes it really nice & moist
Put all the dry ingredients in a large bowl and mix thoroughly. Add the soya milk and malt extract Mix very well and let sit 30 minutes If the mixture is too stiff add some more soya milk Spoon into two greased and lined (parchment paper) loaf pans Bake in a 190c / 375f oven for 1 hour and 15 min. Test with a skewer. Turn out and let cool. Hope you enjoy.
