 Post subject: Potato Salad Help!!

One of our users had found the perfect potato salad recipe on the net and has now lost it. She has tried to locate it for hours and is asking for help. She decribes the potato salad as a recipe consisting of red potatoes, mayo, a few veggies for garnish, and a sauce to pour over before serving. The sauce consists of oil/vinegar she thought and there were no eggs. Once mixed up, you served it on a bed of romaine lettuce.

If anyone knows of this recipe or where to find it, she'd be thrilled to hear from you here!

Karl’s World Famous Potato Salad


5 lbs Red Skin Potatoes
1 Doz Large Hard Boiled Eggs
1 lb Bacon Diced 1” pieces Fried
½ Cup Fresh Chives
¼ Cup Spring Onions Chopped
1 Cup Dukes Mayo
¼ lb Sweet Cream Butter (1 stick)
8 Tbs Minced Garlic
1 Tbs Oregano
1 Tbs Black Pepper
Salt to Taste



Cut the red potatoes into ½ “ pieces and leaving the skins on rinse. Place the potatoes into a large casserole dish and add the butter ( cut up) the garlic, the chives, and black pepper, and oregano. Place into a pre heated oven @ 375 degress for about 45 mins. Besure to stir about every 15 mins. When potatos are done remove from oven. Add bacon, spring onion,salt & pepper, and mayo. Fold together until combined. Fold in egg and serve. Great hot or cold.
