Post subject: looking for an old recipe for Fruit Medley Squares
PostPosted: Fri Nov 26, 2004 11:49 am
 I used to have this recipe, it contains dried mixed fruit tidbits. There is a crust that gets baked and then the fruit and whatever else goes into it, gets poured on top and gets baked again. These are so good, and my daughter loves them and wants the recipe. Unfortunatly, I moved twice in less than 3 months and durring that time I lost the recipe....Please Help me :?:

I don't have exactly what you are looking for but here is something very similar and absolutely delicious.

    FRUIT TARTLETS A LA JOE

    1 cup of flour
    1/2 stick of unsalted butter
1 cup of meusli (your favorite)
    3 tbsp of orange juice

    CUSTARD

    1 cup milk
    2 tbsp honey
    1 tbsp custard powder

    TOPPING

1 1/2 cups mixed dried fruit
    2 tbsp apricot jam

Preheat oven to 400 degrees F
Combine flour and butter in a food processor
Add the meusli and sufficient orange juice to make a soft dough
Roll pastry out on a lightly floured board until about 1/4" thick
Cut out approx 4" circles and ease into a greased muffin tin
Using a fork make holes on the bottom of each tartlet
Put in fridge for 15 minutes
Bake in oven for 20 minutes until golden
Allow to cool on wire rack
In a small saucepan, blend the milk, honey and custard powder until smooth
Bring to a boil, lower heat and simmer for 3 minutes stirring constantly until thickened
Remove from heat and cover with plastic wrap
When cool, spoon into the tartlets and then sprinkle the dried fruit over the custard
Heat the jam until runny and spoon or brush over each tartlet.
    Store in an airtight container.
    ENJOY
