Maya or other brand Hawaiian Plantains Cooking Oil Salt

Cut Plantain into 1/2 inch disks or circles. Then peel. Place pieces in hot oil in deep pan or deep fry.
Allow to cook for approximately 2-3 minutes. Remove to cutting board or cooking surface and mash flat with bottom of coffee cup.
Return to cooking oil and allow to cook to a golden brown. Don't overcook.
Remove to drain on paper towels and salt to taste.
This is a great appetizer that is colorful and makes a different side dish.
Note: Hawaiian Plantains are as round as small oranged and are not always available. Check with your vegetable department manager!
