flour tortillas-a variety of red (tomato), green(spinach)and white tortillas is great a bit of very finely shredded cheddar cheese very tiny diced red onion red pepper, jullienned green pepper, julliened carrot, julliened a sour cream/mayo spinach dip (I buy the pre-made with the water chestnuts, etc., or make your own with the Knorr dry soup mix) green onion tops cut into ribbons or chive strings

Cut the edges off the tortillas, turning each into a square for neater rolling. Let the tortillas sit at room temperature so they will be easier to roll up. Spread each square out to the edges with some spinach dip, sprinkle with a bit of cheese and sprinkle with a bit of diced red onion. Create a log of both colors of peppers and carrot on the bottom third of the tortilla, stretching it all across the length of the tortilla. Tightly roll the tortilla into a cigar shape, keeping the log of veggies tightly together. Using a SHARP knife, cut into 3 or 4 chunks, secure each with the chive string or a toothpick. Serve the cut-side face up. It looks very colorful and pretty with the cluster of jullienned veggies in the center of each bite!
