Barrys Sausage Rolls Great for a Party Snack! |

1 kg sausage, minced 2 cups dry bread crumbs water 1 tsp. salt 1 tsp. mixed herbs 1/2 tsp. pepper 1 Tbls. beef stock 1 Tbls. fish stock, dry 5 sheets frozen puff pastry grated cheese, optional

Soak bread crumbs with water, just add enough so crumbs aren't saturated.
Mix all ingredients into the crumbs well.
Cut pastry sheets in half. Either put a line of the mix along one edge of the pastry by hand or pipe it out of a piping bag with at least a half inch hole in it. Wet the opposite edge with water then roll the pastry over mix till it's sealed. Lightly tap the back of a knife along the top in both directions as to make a cross pattern. Trim the ends, then cut each roll into 4.
Place on a tray so they don't touch, top with cheese or wash with 50% water and milk wash.
Bake for 30 minutes at 220 degrees C. or 450 degrees F.
