Black Bean Mango Salsa Spicy Chipotle Mango Salsa with a kick! |

2- 15 oz cans of back beans, drained, not rinsed 1 med red onion, chopped 1 red pepper, chopped 1/2 - 1 small can (6-7 oz) of chipotle peppers in adobo sauce, to taste 1/2 - 1 cup chopped cilantro, to taste Juice of 2-3 limes 1 cup of frozen corn, thawed 1 tsp olive oil 2 mangos, cut in small pieces

Put first 6 ingredients in a large bowl and mix. Cook corn in olive oil until it starts turning brown. Add corn to mixture in bowl. Then add mangos. Serve with tortillla chips. Can be made up to 1 day ahead of time
