Cajun Pickled Bananas
Tasty Tarty Treat!
several large green bananas
8 cups white vinegar
2 cups water
1 cup Louisiana Hot Sauce
1 cup granulated sugar
1 cup diced jalapeno peppers
1 cup golden rum

 

Combine all ingredients except bananas in large pot and bring to boil. Remove from heat and cover.

Take the whole bananas (leave the peel on) and drop them into the liquid mixture, allow to cool completely. Place 3 bananas each in large pickling jars and cover with the liquid. Tighlty seal and allow to age at least 3 weeks.

To serve, remove bananas from jar and carefully remove the peels with a sharp knife. Slice the banana into 2 inch rounds and arrange on platter.

Garnish with lemon slices and serve with mayonaise for dipping.
