PERPETTI (cheese balls) 2 c. bread crumbs 1 c. Italian cheese, grated such as Parmassan or Romano 1 c. cooked mashed potatoes 1 tsp garlic powder 1/2 tsp. sweet basil 1 tsp. parsley 4 eggs Black pepper to taste

Mix potatoes and all dry ingredients in bowl. Add eggs and mix lightly. Roll into small balls 1 to 1-1/2 inch in diameter. flatten slightly Fry in deep fat or oil til lightly tanned on both sides (2-3 mins per side).
Eat as is, or add these to your favorite red spaghetti sauce and cook at least 1/2 hour. Ladle over cooked spaghetti or macaroni such as rigatoni. yummm
