Ground Pork Ginger Root Napa Cabbage Scallions Sesame Seed Oil Soy Sauce Flour Water
|
Chop the Napa Cabbage and Scallions into small pieces, then mince the Ginger Root. (about 1/2 cup of cabbage, 1/4 cup of scallions, and 1tsp ginger root). Mix ingredients above with about 1/2 pound of ground pork, set aside. In a bowl mix about 3 cups flour with a 1/4 cup water. Mix the flour and water with your hands, and keep adding more water until it reaches a dough like consistency which you can roll out with a rolling pin. (Like Sugar Cookie Dough). Roll out the dough and then using a circle shaped cookie cutter or a glass cut out circles. Put a pinch of meat mixture into the center of each dough circle (use your judgement, there should be enough dough for a satisfying bite, but you must be able to fold the circles in half and surround the meat in dough). Fold the dough in half over the meat, and pinch the edges shut, they should look like a crescent. When you are finished get a frying pan with a cover. Put oil into the pan, just covering the bottom, and let it heat up until it is hot enough to fry. Place all of the dumplings in the pot and let them fry (about 2-4 minutes or until the bottom is brown). Pour out the oil, keeping the dumplings in the pan and immediately add about 1 cup of water and cover the pot to allow the dumplings to steam. While they steam for about 3 minutes take out the sesame seed oil and the soy sauce. Pour 1/4 cup of soy sauce into a cup and then 1/2 tsp of sesame seed oil. Garnish this dipping sauce with left over scallions if you have any left. Take the dumplings off the stove after the 3 minutes, and put onto a paper towel to drain them. Empty out the frying pan of water , dry it, and place a bit more oil in it. Place the dumplings browned side down and refry for 2 minutes (so they have a delicious crunch to them). Take them out of the oil when done, and enjoy them ^.^ They taste delicious dipped in the dipping sauce.
