Beef Green Curry
1  lb Beef, tenderloin, cut into bite size
2  tb  Green Curry Paste
1  med.  Egg plant (cut into bite size pieces)
1  cup Coconut milk
1  tb Cooking oil
1  tsp Sugar
1  tb  Fish sauce or salt to taste
* commercial green curry paste is available most Asian grocery stores

 

1. Heat the oil in a large pan, add curry paste and stir-fry for 2-3 minutes then add beef, cook for a further minute.

2. Pour in the coconut milk and egg plant, stir to blend throughly and slowly bring to boil. Continue to cook over medium heat until the beef is cooked. Add sugar and fish sauce.

3. Transfer to a serving dish and garnish with kaffir lime and basil leaves.
