Beef Kabobs
2 lbs. beef, cut into 1 1/4inch cubes 1 can 10 1/2oz. beef broth 1/3 cup apple juice 2 Tbls. soy sauce 2 cloves garlic, crushed 1/4 tsp. onion powder onions, peppers, cherry tomatoes, fresh mushrooms, corn on the cob, pineapple, small new potatos(partly cooked), or any other vegetables you like marinated.
Heat beef broth, juice, soy sauce, garlic, and onion powder to a boil. Reduce heat and simmer uncovered for 5 minutes. Cool. Marinate the cut up vegetables and beef cubes in this for at least 3 hours. I like to leave them up to 24 hours. Keep in refrigerator and spoon liquid over them occasionally. Remove vegetables and beef and place them on a skewer. Stir 1 tbsp. plus 1 tsp. cornstarch into remaining liquid. Cook in a saucepan, stirring constantly. Bring to a boil for 1 minute. Use to brush over Kebabs as you grill them, turning every 4 to 5 minutes until done.
