Best Ever Meat Loaf

1 1/2 lb. ground beef 2 beaten eggs 3 slices bread, crumbed 3/4 c. milk 1/2 med. onion, chopped 1/2 c. grated carrots 1 c. grated cheddar or mozarella cheese 1 tsp. dried parsley 1 tsp salt 1 tsp. basil or thyme 1/4 tsp. pepper Topping ingredients: 1/2 c. tomato sauce 1/2 c. brown sugar 1 tsp. prepared mustard

Soak bread, milk & eggs together, then combine all ingredients. Form into a loaf and place in shallow baking pan. Bake at 350 degrees for one hour. Combine topping ingredients & pour over meat loaf after it has baked 35 minutes. Baste with topping occasionally during the last 20 minutes.
