Bolognese Sauce Delicious Meat Sauce for Spaghetti |

1 and 1/2 pounds of good quality minced (ground) beef Large can or 2 small cans peeled tomatoes 1/3 cup thick tomato paste 1 very finely chopped onion Dash of good olive oil 1 tsp. oregano 1/2 tsp. thyme 4 cups water salt and pepper Parmesan cheese to serve

Heat oil in a heavy-based pan. Cook the onion for a few minutes, then add beef. Cook until beef is well-browned and there are no lumps sticking together. Drain off any excess fat.
Mash the canned tomatoes in a bowl, (careful- they squirt like crazy!)and add to the meat with the tomato paste, oregano, thyme, water and seasonings. Bring to the boil, reduce heat and simmer very gently for 1 1/2 hours or more until liquid has nearly evaporated. Do not cover pan.
Serve hot over freshly-cooked spaghetti in pasta bowls with a good dredging of parmesan cheese.
Serve salad of greens, tomatoes, thinly-sliced onion and black olives on the side. Garlic is NOT usually added to true Bolognese sauce.
