Carpetbagger Steak Easy and Amazing |

2 Filets of beef, 2 inches thick 1 Pint fresh oysters Salt and fresh ground pepper

Get some gorgeous, two-inch-thick filets of beef. And a pint of fresh oysters, some fresh salt (seasalt is best) and fresh peppercorns.
Cut pockets in the steaks, almost but not quite all the way through.
Stuff the pockets with a few of the oysters, add some salt and some fresh grinds of the peppercorns.
Fasten the pockets together with toothpicks, then saute the filets in hot butter and/or oil until they're done to your taste.
Easy and amazing. I find that few people have ever encountered this -- even on the Gulf Coast, where I live, and everybody I've ever served it to has loved it. The filets take about 10 minutes on one side and 8 on the other to reach our preferred degree of doneness.
