Corn Beef Curry Quick and Simple Yet Filling! |

1 can corned beef (hamper is best but any will do) 1/2 cup fresh/frozen peas 2 eggs 2 potatoes (diced) 1 tsp. black mustard seeds 10 curry leaves 1 tsp. chili powder or to taste pinch salt 2 Tbls. oil or ghee 1 onion, diced Fresh boiled rice for 2-4 people

You can either deep fry or shallow fry diced potatoes and onions.
Beat eggs together add salt and pepper. Pour into a pan and make omelette. Once it is cooked take out, dice up and put aside.
In a heavy based frying pan or electric pan on a low heat put in oil then add mustard seeds. Cover until you hear the seeds pop.
Add corned beef and stir through mustard seeds. When blended add chili powder, salt to taste, curry leaves, and peas (if frozen peas are used, put in a cup of hot water till they are softened first)and cook for a few minutes.
Then re-add potatoes, onions and omelette. Stir through till all ingredients are mixed together and heated through.
Remove from heat and serve in bowls or on dinner plates and serve on boiled rice.
