Creamy curry and rice curry |

1.5 Kg beef mince 2 onions finely chopped 1 red capsicum sliced 125 grams pineapple pieces 500 grams mixed vegetables frozen Salt and pepper 2 tablespoons curry powder 2 cups milk 1 cup cream 3 tablespoons mild mustard 1/4 cup mayonnaise margarine 3 tablespoons plain flour

In a frypan, cook onions till transparent, and add beef mince and brown, adding capsicum and mixed vegetables until cooked. In a separate saucepan melt margarine, then take off heat and stir in the flour until smooth and no lumps Add curry powder, mustard and mayonnaise till combined, and add milk and cream and put back on medium heat stirring till thick and bubbly. Turn off heat. In mince mixture add pineapple and combine all together adding salt and pepper to taste, keep warm in oven and add 4 cups rice to rice cooker and cook. Serve rice with curry over the top enjoy
