Irish Barnburner Burger

1 lb. ground beef 4 large sesame seed hamburger rolls 2 medium size potatoes 1/2 small onion 1/2 bottle of your favorite beer 2 Tbls. kosher salt 2 tsp. black or white pepper 2 Tbls. minced garlic 1/2 stick butter or margarine

Slice potatoes thin (similar to potato chips) and slice onion to achieve small rings. Combine potatoes and onions and coat with seasoning (kosher salt, black pepper, minced garlic).
Grease aluminum foil with some butter and wrap the potatoes and onions-adding pats of butter throughout before sealing. Grill this packet on low/medium heat for 15 minutes on both sides, or until potatoes are cooked through. (Don’t worry if you burn SOME-it makes the dish better!)
While potatoes and onions are grilling, empty beer into a mixing bowl and add ground beef. Work the beer thru the meat for a minute or two, and then assemble four 1/4 lb. burgers. (Tip: if the meat is too moist, add shredded potato skins or bread crust as adhesive) Season burgers by rubbing kosher salt and black pepper on both sides.
Grill burgers to your preference and lightly toast sesame buns on the grill.
Use the bottom half of the sesame roll and layer grilled potatoes and onions, place burger on top, add your favorite condiments and seal up with the top bun. (Optional ingredients: cheese, ketchup, mustard, etc.)
