beef short ribs (as many as you think you'll need) Jamaican Jerk Seasoning Mesquite Seasoning chopped garlic

Rinse your beef short ribs and place in a medium bowl. Shake Jamaican Jerk Seasoning over meat, and rub with hands thoroughly. This seasoning has a bite to it, so you should shake with caution, unless you like spice. Repeat this with the Mesquite Seasoning. This gives it a semi-sweet flavor. Add the desired amount of garlic, and mix with hands again. Cover with plastic wrap or lid, and refrigerate for at least 2 hours. Cook to desired doneness. 4-5 minutes is medium rare, especially on thicker pieces. I served this once with zucchini and onion cornbread, asparagus with cheese and sour cream sauce, new potatoes with chopped chives, marjoram and butter sauce, and topped off with Dump Cake. This is a big Southern Meal. :)
