Korean Barbecued Short Ribs
3 lb. beef short ribs 3/4 cup soy sauce 1 clove garlic 2 green onions 1 tsp. instant beef bouillon 1/2 cup water 2 tsp. sesame oil sugar 1 Tbls. vinegar 1 tsp. sesame seed 1/2 tsp. dry mustard 1/8 tsp. pepper
Trim off excess fat. In a large Dutch oven, mix 1/2 cup soy sauce, onions, garlic, beef bouillon, and 1/2 cup water. Add rib pieces. Cover, simmer 1 1/2 hours or till tender. Drain, mix remaining soy sauce, sesame oil, sugar, vinegar, sesame seed, dry mustard, and 1/8 teaspoon pepper. Place ribs over slow coals. Grill 20 to 30 minutes; turn and brush frequently with soy sauce sesame mixture. Serves 6.
Simmering tenderizes the ribs. I have marinated this overnight in the refrigerator without simmering and then grilled the next day -- Almost as good. I have also drained off marinade, boiled it and thickened with flour so sauce sticks to meat. Then served over rice.
