Mama's Meat Loaf

1 cup chopped onion
3/4 cup chopped green pepper
3 Tbls. fresh minced parsley
1 tsp. pepper
1 Tbls. salt
2 garlic cloves, minced
1 egg, lightly beaten
1 slice wheat bread torn into pieces
1 1/2 pounds ground beef
1/3 cup ketchup

Preheat oven to 350 degrees.
Combine 1st 8 ingredients into a large bowl. Break meat into mixture and stir until blended. Lightly grease 9x5 inch loaf pan and place mixed ingredients into it. Spread ketchup over top of loaf.
Bake at 350 degrees for 1 hour or until meatloaf internal temp. reaches 160 degrees. Let loaf stand for 10 minutes.
Cut and serve.
