Quick Tasty Mince and Rice

500g minced beef 2 cups long grain rice 1 onion 1 large carrot` 1 red pepper 2 cloves garlic Tin of chopped tomatoes 2 tsp. curry powder or curry paste 2 cups water Salt and pepper to taste
|
Chop all vegetables small.
Brown minced beef in a pan until browned. Add vegetables and cook for a few minutes.
Add rice and cook again for a minute or two.
Add curry power, tomatoes and water. Season to taste. Cook for 10 to 15 mins until rice is cooked, you may have to add a little more water.
